Chocolate Chip Banana Bread

Here's another of my family favorites that I've been asked to share my "secret" recipe.


Ingredients:

  • 3-4 ripe bananas (4 makes it more moist)

  • 1 egg, beaten

  • 1/3 cup of canola oil (or 1/2 cup melted butter)

  • 1 tbsp of vanilla

  • 1/2 cup of sugar

  • 1/2 tsp of salt

  • 1 tsp of baking soda (or 1 tbsp of baking powder if you have to sub)

  • 1.5 cups of all purpose flour (I used unbleached)

  • 1/2 to 1 cup of semi-sweet chocolate chips (not the mini kind)

  • 1 greased baking loaf pan

Instructions:

  1. Preheat oven to 350 degrees

  2. In a large mixing bowl, mash bananas

  3. Mix all wet ingredients (bananas, eggs, vanilla, oil)

  4. In a separate bowl, mix sugar, salt, baking soda and flour

  5. Slowly add dry ingredients to the wet ingredients until fully wet (do not over mix)

  6. Add chocolate chips and mix until fully integrated

  7. Pour into greased baking pan

  8. Bake for 1 hour, or until crust is golden brown and toothpick comes out clean


Notes:

  • If you use 1/2 cup of chocolate chips, you can add a little more sugar if you want the bread to be sweeter.

  • Non-stick pans cook up faster, so you may only need 55 minutes. Check with toothpick.

  • 18 muffins need only about 25-30 minutes, so check those with a toothpick, too.
